BACK TO SCHOOL MEALS 101

School is back in session, and you know what that means! POP QUIZ!!! Name three quick, easy and healthy recipes that you can create for your kids for breakfast, lunch and dinner. Don’t know the answer? I am here to help! Check out my favorite recipes to ace every meal of the day this school year.

BREAKFAST

Remember those mornings when you were frantically running around the house struggling to get your kids dressed and out the door for school only to realize you forgot to make breakfast? Don’t worry. We have all been there. Get your kids out the door in a flash this school year with simple, tasty and creative breakfast recipes! One of my favorites to prepare is a frittata, which is an Italian dish made with fried beaten eggs and fresh produce. The beauty of this breakfast is that there is no need to compromise good food for convenience. You can prepare frittatas in advance and freeze them to keep them fresh to serve throughout the week. In addition, you can even make mini frittatas using a muffin tin for those hectic mornings when your family is in need of breakfast on the go. Other easy-to-make and delicious recipes include a prosciutto and egg panini, yogurt and berries, and scrambled eggs with ham, cheddar and chives.

LUNCH

Let’s be honest. Everyone’s favorite class is lunch! Think outside the (lunch) box and surprise your kids with something different this school year. Instead of your basic sandwich, prepare roll ups or pinwheels. They are fun, creative ways to put a spin on the traditional sandwich. For the picky eaters, you can create peanut butter and jelly pinwheels made with farmers market fresh jelly. If they are fans of the peanut butter and jelly pinwheels, they may also enjoy peanut butter, honey and banana roll ups! For those that like to try new things, introduce them to rueben rolls made with soft cream cheese, spicy brown mustard, horse radish, sauerkraut, swish cheese, and thinly sliced deli meat. Lavash wraps and mini pita pockets are also easy-to-make lunch time treats. All you have to do is add turkey, cheese and thinly sliced pickles. To combat the midday munchies, prepare trail mix with dried fruits, nuts, cereal and pretzels. I suggest skipping out on the chocolate chips and M&Ms for a light and healthy snack.

DINNER

With so many after school activities and homework assignments, it is important to have a few quick and easy dinners hidden up your sleeve now that your kids are back in school. The key is to keep it simple and avoid over complicating things. I use a slow cooker to create some of my favorite dishes, which include pot stews, casseroles, lasagna, enchiladas, and meatloaf. These dishes can be prepared in advance and will stay fresh for 1-2 days in the refrigerator. If you are really organized, you can prepare them at the beginning of the week, freeze them, and defrost them as needed. BON APPETIT!
